Digging Up and Storing Organic Potatoes for Winter Eats

Organic potatoes are a great staple root crop that can be stored though the winter. We grew this batch starting in the spring and just now digging them up in November. The crop wasn’t as good as we had anticipated, but we got enough potatoes to store and eat through winter. Storing potatoes in the ground is easy. Once you have dug them up from their growing quarters, you can dig a hole in your garden large enough to layer with some straw and then potatoes, straw then potatoes, then dirt on top of it all. Some things to remember are:

  • Keep potatoes out of the light
  • Don’t wash the potatoes you have dug up
  • Keep enough dirt on top to keep potatoes from freezing
  • Keep them dry -  ie… Don’t water anywhere around your hole

Potatoes generally will keep well in a cool dark area for about 2 months or so. If you see them begin to sprout, it’s time to make some twice baked potatoes or maybe some really nice Organic Potato SaladDigging Up and Storing Organic Potatoes for Winter Eats. Make sure you cut off the little sprout eye as it doesn’t take real good and some say can make you a little sick.
